Main Ingredients:

• Half chicken (750-900g)
• 25g dried shiitake mushrooms
• 1 carrot
• 1 green bell pepper
• 5g ginger
• 2 cloves garlic

Seasonings:

• 1 tablespoon light soy sauce
• 1 teaspoon dark soy sauce
• 1 teaspoon Shaoxing wine
• 2g salt (1/2 teaspoon)

Clean the chicken thoroughly and cut it into bite-sized pieces.

Soak the dried shiitake mushrooms in warm water until softened, then rinse thoroughly and drain. Cut the carrot and green bell pepper into chunks. Slice the ginger and peel the garlic cloves.
